Mango Slaw
This tangy mango slaw is the perfect topping for summer tacos, on tangy pulled pork sliders, or as a side to spicy fried chicken.

- 1/2 cup diced mango
- 1/2 large jalapeños seeded and chopped (use other half for ancho paint)
- 1 tablespoons white wine vinegar
- 1 tablespoons sugar
- 1/2 tablespoon water
- 1/2 small shallot minced (use the other half for ancho paint)
- 1/2 cup mayonnaise
- 1/3 cup chopped cilantro
- 1 garlic cloves finely chopped
- 1 tablespoon fresh lime juice
- Salt and freshly ground pepper
- 7 cups shredded coleslaw mix
In a small bowl whisk vinegar, sugar, water, shallot, mayonnaise, cilantro, garlic, lime juice, salt, and pepper in a bowl.
Combine slaw and mango in a large bowl
Pour dressing over the slaw and mango mix and toss until well combined
Chill in the refrigerator at least 1 hour before serving
