Mango Slaw

This tangy mango slaw is the perfect topping for summer tacos, on tangy pulled pork sliders, or as a side to spicy fried chicken.

Ingredients
  

  • 1/2 cup diced mango
  • 1/2 large jalapeños seeded and chopped (use other half for ancho paint)
  • 1 tablespoons white wine vinegar
  • 1 tablespoons sugar
  • 1/2 tablespoon water
  • 1/2 small shallot minced (use the other half for ancho paint)
  • 1/2 cup mayonnaise
  • 1/3 cup chopped cilantro
  • 1 garlic cloves finely chopped
  • 1 tablespoon fresh lime juice
  • Salt and freshly ground pepper
  • 7 cups shredded coleslaw mix

Method
 

  1. In a small bowl whisk vinegar, sugar, water, shallot, mayonnaise, cilantro, garlic, lime juice, salt, and pepper in a bowl. 
  2. Combine slaw and mango in a large bowl
  3. Pour dressing over the slaw and mango mix and toss until well combined
  4. Chill in the refrigerator at least 1 hour before serving
