Sort and rinse the beans, then place them in a large pot and cover with water. Bring to a boil, remove from the heat, and soak overnight in the same water. The next morning, drain, add 3–4 cups of fresh water, and add a ham hock, bacon, fatback, or another preferred seasoning meat. Check occasionally and add more water as needed. Simmer gently for about 2 hours, or until the beans are tender and the broth is rich and soupy. Add the small ham seasoning pack inside your bag of mixed beans.
